Don’t Let This Change Who You Are

Things happen to us in life.  We may lose a job, a friend or loved one; people may mistreat us or things just may not go our way but don’t let this change who you are.  Don’t fall into the trap of being bitter and wallowing in self-pity.   We’ve all faced challenging times with someone letting us down or disappointing us.  We may try to remain in good spirits but the thought of how we were wronged is still there.

It can be easy to want to get even with someone and become sour and angry, especially if it’s an ex, :-/ but don’t let any situation or circumstance change you into something you’re not.  We’ve all been there and things really do get better. So pick yourself up, dust yourself off and refuse to let anyone or anything spoil who you are naturally.

And by the way, if you’re thinking about breaking all the windows of your ex’s car,  don’t do it, just pray that he loses his job, crashes his car beyond repair and the girl he cheated on you with leaves him. Trust me, you’ll feel a lot better.  🙂

However, on a serious note, we’re all in this world together so be a listening ear or a helping hand to someone who may need what you have to offer.

Frugal Fashion Friday

I love shopping and what’s better than shopping and getting great bargains.  For frugal fashion Friday, I found some really neat things for $100.00 or less that will have you looking good and feeling great.

The Multi Wrap Jumpsuit.  I love jumpsuits and I found this one at Target.com for only $26.00. There are so many ways you can wear it. Instead of having a V neck,  you can wrap the garment to make it into a halter jumpsuit, a classic thick band cross-back jumpsuit and other variations.  Check out Target.com and do a search for the “Mossimo Women’s Multi Wrap Jumpsuit”.

Every women needs a classic work bag and I found this one at us.accessorize.com. for $88.00.  For this style and quality of bag, it’s a great deal.

My new favorite thing that I want in every color are the leather band statement bracelets. You can get them in a single band or a multiband. The one  pictured is a single band  from Charming Charlie for $13.00. My Target store also has the multiband bracelet for about $10.00.

Healthy Summer Bites

Caramelized Onion Walnut Pizza w / Apples

Summer means entertaining with friends and enjoying good food.  We all know the urge we can get when we’re with our friends to eat things we said we weren’t going to eat in order to have a slim figure.  Well, here’s one food that is filling and that I truly enjoy.  A spin off the old favorite food of almost everyone in the world.  What is it?  Pizza!   Here’s how to make a healthy and delicious summer snack that won’t leave you feeling guilty.

Ingredients:
2 Tablespoons margarine or butter
4 medium onions, thinly sliced
2 teaspoons sugar
1 10 ounce package refrigerated pizza dough or Boboli (whole wheat)
1/2  Cups of gorgonzola cheese
1/2 Cup of walnut pieces

Directions:
1.     In a large saucepan melt margarine or butter. Add onions. Cover and cook over medium-low heat about 15 minutes or until onions are tender and golden, stirring occasionally. Sprinkle sugar over onions. Cook, uncovered, for 10 to 15 minutes more or until browned, stirring occasionally.

2.     Lightly grease an 11 to 13 inch pizza pan. Unroll pizza dough (if refrigerated) and transfer to greased pan, pressing dough out with your hands. Build up edges slightly.  Bake in a 425 degree F oven for 7 to 10 minutes or until lightly browned. For already made pizza dough, add to a lightly non-stick sprayed pizza pan.

3.     For refrigerated dough, spread cheese evenly over hot crust. Top with apples, onions, walnut pieces and more cheese. Bake for 10 to 15 minutes more or until heated through. For already made pizza dough, brush a little bit of melted butter or margarine on pizza dough, add onions, apples, walnuts and cheese.  To give your pizza little kick you can also add your favorite chutney or jam, instead of a little melted butter.  My recommendation would be Stonewall Kitchen’s – Fig and Raisin Chutney but watch the sugar content.

P.S. There are different variations to make this pizza to your liking. You can add figs, pears,  goat cheese, feta or blue cheese instead of Gorgonzola. Whatever you decide, enjoy!
